This easy to make salad dressing has become an absolute favourite of mine, in fact lately I’m having it a few times a week with dinners. If you are looking for a simple dressing that can also work as a dip then this creamy dairy-free recipe will do the trick.
These days I am enjoying the majority of my meals raw. What does this mean? For breakfast I have a tonne of fruit, lunch is either just fruit or fruit with some greens (i.e. lettuce and celery), and then dinner is sometimes a tonne of fruit with a tonne of greens or a huge salad with a homemade salad dressing.
Why raw?
Over the last two years (since 2013) I have introduced more carbs to my daily diet and felt much better. Last year (2014) I increased the amount of carbs which meant decreasing the amount of protein and fats and felt even better. Around this time I completely stopped eating any animal products and switched to a plant based diet (aka vegan) and my body felt AMAZING!!!
Naturally I desired fresh raw fruit and a tonne of raw vegetables. I have always loved fruit and veggies so this was a natural instinct. So with these changes over the past year I have been eating higher carb low fat raw meals at breakfast and lunch. Generally, breakfast will be lots of bananas and sometimes other fruits on the side such as mangoes. I might eat them as they are, make a smoothie or have a bowl of banana ice cream. Lunch will be a lot of papaya and maybe bananas too, or bananas with greens. During the earlier months dinner had been cooked foods that usually consisted of meals such as white potatoes with veggies and a salad, rice with veggies and a salad, rice noodles with veggies, gluten free spaghetti with tomatoes and a salad and homemade gluten free pizza. I have been feeling fantastic with the raw meals at breakfast and lunch with super digestion after meals. The cooked dinners were incredibly satisfying to the taste but sometimes digestion wasn’t as amazing as the other meals and I didn’t feel as amazing. On top of that over time I noticed I naturally desired more raw food at dinner too. So I started introducing more high carb raw foods at dinner a few months ago and have been absolutely loving it, the bonus has been super digestion just like the other meals. Since doing this I have tried a few cooked dinners every now and then but the majority have not satisfied me even though they are exactly the same meals as when I used to enjoy them, plus I noticed again my digestion was not as good after the cooked dinners.

There have been so many positive benefits to eating this way such as fantastic digestion and elimination, healthy skin, hair growing quicker, more energy, more positivity, more appreciation for life, more compassion, less stress, easier to maintain a slim body composition, and control and eliminate some allergic reactions I was having with food intolerances. Some of these I experienced with the combo of raw and cooked high carb plant based meals, all of these benefits I have experienced with raw high carb plant based meals.
Overall I absolutely love eating this way and get so much satisfaction from every single bite I take. I love simple food and I love that when you eat more fresh raw fruits and vegetables the taste buds truly savour each bite. There’s no need to mask the food with salt and oils. It’s effortless to eat and enjoy juicy papaya, sweet ripe bananas and crunchy raw celery. The body feels amazing, you feel amazing and it is so simple. So simple and so healthy. What more could you want and need?

So this simplicity brings me to this recipe. As mentioned I am thoroughly enjoying my meals, and some dinners consist of a huge amount of fresh raw veggies such as lots of lettuce, big tomatoes, peas, sweetcorn (when in season – it’s delicious raw), celery and carrots. Due to the vast amount of veggies it is nice to enjoy a dressing that also works as a dip for all the fresh goodies. This meal is so simple to make which always gets my vote.
Also, remember it is important to get those calories in which is why I make this dressing with the added fat to help boost the calorie intake as veggies are very low in calories. When eating these raw veggie dinners I always get plenty of calories throughout the day from fruit. Never undereat as you will feel low in energy, cranky, have poor digestion, bad sleep, poor mental focus, negative thoughts, potential hormonal issues, difficulty to maintain the body shape you desire, difficulty to lose fat, and this is just to name a few problems with not eating enough calories. When eating high carb raw foods it is so important to ensure you are eating enough which means the volume of food will be greater, but don’t worry it does the body good. I will continue to experiment with adding a few cooked dinners in here and there if I desire them but right now I am feeling incredibly amazing eating high calorie high carb plant based raw foods at all meals every single day.

This salad dressing is creamy with a slight zesty bite from the lime juice. It is dairy-free so the delicious creamy base comes from the tahini and celery. Serve it with a big bowl (or two) of fresh raw vegetables such as lettuce, celery, cucumber, tomatoes, peppers, peas, sweetcorn, courgette, and/or kale. Pick any you fancy and throw them together, remember to make a lot for one person as they are only vegetables so you need to eat plenty of them to get all the nutrients and calories.
I love to dip a few big chunks of celery into the dressing first then pour the dressing over a salad and enjoy every crunchy, raw, creamy fresh bite. Yummy!

Creamy Low Fat Salad Dressing
Ingredients
Serves 1
- 2 tbsp tahini
- 3 to 4 celery sticks, chopped
- 1 tomato, chopped
- Juice of 1 lime
- 2 tbsp water
Method
- Add the liquid ingredients to a blender first to make it easier to blend. Add the lime juice and water.
- Then add the tahini, tomato and celery.
- Blend everything together until smooth.
- Serve over a big fresh salad.
