Easy Noodles Two Ways (Thai or Tahini)

I’m all about easy dinners that are simple to make that are full of simple and healthy ingredients and satisfy my taste buds, mind and body. Well this is one of them. Or rather I should say here are two of them.

The noodles dinner is a weekly meal in this household, however I always make two varieties for that one dinner. This is one of those meals that is so easy to make two slightly different meals out of very similar ingredients and it pleases both hungry adults. I like mine quite simple with a ridiculous amount of broccoli, starchy goodness from the noodles and creamy deliciousness from the tahini dressing. My husband loves his noodles with a Thai kick and a variety of veggies. Therefore, this is one meal that I am happy to make to satisfy us both without creating a big mess in the kitchen for two separate dinners. I’m not a fan of making different dinners as it creates more hassle than required, plus as I step into motherhood I don’t want to create any habits that will lead to kiddies thinking they can demand a different dinner from the rest of the family. Fussy eaters are a no-go! (haha strict parenting is already kicking in and baby is still in my womb). But as I mentioned this is one of those meals that incorporates most of the same ingredients and is easy to make.

Anywho, you can choose either recipe and make it your own. For both recipes I’ve added the vegetables that we like, however feel free to use any mix of veggies that you enjoy. I add an insane amount of broccoli to my tahini noodle dish because I’m just cuckoo for the green trees. You could even forget the tahini dressing or Thai infusion and just add lots of yummy coconut aminos. Whatever works for you just do it and enjoy the simple noodle goodness. This is a meal that requires little fuss and will leave your belly feeling full and happy.

Both recipes are healthy, easy, simple, tasty, gluten free, satisfying, comforting and just delicious.

It’s got noodles. It’s got vegetables. It’s got either a creamy twist or a spicy kick. Mmm. Are you in?

Here’s the recipe for two easy and healthy noodles dinners.

Easy Noodles Two Ways (Thai or Tahini)

Ingredients

Recipe One: Noodles with Veggies and Tahini (My favourite)

Serves 1

  • 200 to 250g dry rice stick noodles
  • Broccoli (LOTS!!!)
  • Sugar snap peas
  • 2 limes
  • 2 tbsp. tahini

Recipe Two: Thai Noodles (The husband’s favourite)

Serves 1

  • 200 to 250g dry rice stick noodles
  • Broccoli
  • Sugar snap peas
  • Peppers
  • Mushrooms
  • 100ml coconut milk
  • 2 tbsp. red or green vegan Thai curry paste

Method

  1. Boil water.
  2. Add the dry noodles to a big bowl and cover with hot water. Leave to soak whilst preparing the rest of the meal.
  3. Chop the chosen vegetables. You can choose any veggies you prefer, I love broccoli and sugar snap peas in this meal and the hubby prefers more of a mix including peppers and mushrooms. You could also use kale, spring greens, courgette and/or carrots.
  4. Add the vegetables to a large pan with some water at a medium to high heat. Place a lid on the pan and cook until the vegetables are ready. This will take approx. 15 minutes.
  5. Drain the noodles then add back to the bowl.
  6. For recipe one: once the veggies are cooked, remove from the pan and add to the noodles. Mix together. Place everything into a bowl. Now to make the dressing. Add the tahini and juice of 1 ½ limes to a small bowl. Add a little water at a time and mix together until you get the desired consistency. You can have it as thin or thick as you like. Once you’ve reached the desired consistency pour the dressing over the noodles and veggies. Use the other ½ of the lime to squeeze the juice over the noodles. Dig in and enjoy!
  7. For recipe two: once the veggies are cooked, drain the water from the pan leaving just a tiny drop for some moisture. Add the noodles to the pan alongside the veggies. Add the coconut milk and Thai curry paste. Mix everything together thoroughly until the paste is fully combined with all the ingredients. Serve in a large bowl, dig in and enjoy!
