This banana ice cream is ludicrously tasty that I feel I should do a campaign to notify everyone in the UK (and world) about how easy it is to make your own ice cream. This ice cream is cheaper than buying all those tubs at the supermarket, it is healthier than any of the tubs of ice cream, it is so so tasty as you can make so many flavours whilst still keeping it cheap and easy, and most of all it honestly does hit the spot for ice cream. There is no ice cream deprivation or feeling “left out”, there is an abundance of feeling awesome and I highly recommend you make a batch this week, especially during the summer months when all you want to do is cool down with ice cream. Forget spending money on the additive, refined sugar, cow’s milk, hurt-the-stomach, feeling guilty types of ice cream. Go for the ice cream that will make the stomach feel fantastic, save pennies and do your health some good along the way.

The beauty of this ice cream is you can have it whenever. Have it for breakfast, lunch or dessert, heck even for dinner! Even if the sun is hiding and there’s a chill in the air just put a jumper on and dive into the mouth-watering bowl of ice cream heaven. This is dairy-free goodness for the body!
All you need is a good food processor or blender. There is no need for an expensive ice cream machine. Most importantly, make sure you freeze the bananas the day before you plan to eat it, and if you are a spontaneous kind of ice cream eater then the best thing to do is freeze separate batches of bananas so that you have a few batches for those days when you really want the creamy heaven but get disappointed when there’s no frozen bananas. Here is the recipe for the easiest ice cream EVER! I call this Banana Nicecream {aka ice cream that will bring you one step closer to heaven}.

Banana Nicecream
Ingredients
Serves 1
- 5 to 8 medium bananas (approx. 500 to 800g)
Method
- The day before you plan to eat this slice up the bananas into ½ cm coins and place in a Tupperware box or freezer food bag.
- Place this in the freezer until the next day. Ideally it wants to be in the freezer 24 hours in advance.
- When ready to eat the ice cream – take the banana out of the freezer.
- Place the banana coins into a very good blender. (You really do need a good blender and blade for this!)
- Blend the frozen bananas. They will start to form like a crumble, then turn more creamy. It may take a couple of minutes. Scrape down the sides when necessary so that all of the bananas mix together to form the ice cream.
- Remove the mixture from the blender and add to a bowl.
- Add toppings if you desire or keep it super simple with this one ingredient affair. Topping suggestions: fresh fruit, homemade carob sauce, raw cacao nibs or fresh fruit blended into a puree for a fruit sauce.
- Dig in!
